Warm Cheese Dip with Cayenne & Watermelon Salsa

Rich cheese, bold spice & a splash of Fancy Hank’s cayenne & watermelon salsa come together in this smoky, creamy dip with just the right amount of heat. It’s warm, indulgent & made for scooping up with our crunchy totopos (tortilla chips).

Ingredients

  • 2 cups shredded cheese (such as Monterey Jack or Pepper Jack)
  • 1 cup cream cheese, softened
  • 1 cup whole milk (or half-&-half for a richer taste)
  • 2 tablespoons Fancy Hank's Taco Rub
  • 1-2 tablespoons Fancy Hank’s cayenne & watermelon hot sauce
  • ½ cup pickled jalapeños, chopped, plus some for garnish
  • ½ teaspoon smoked paprika (more if you like it smokey!)
  • Fresh coriander, chopped (for garnish)
  • 200g bag of La Tortillería Totopos (Tortilla Chips)
  • Salt & pepper to taste

Tips

  • For a chunkier queso, you can add diced tomatoes or black beans.
  • If you want a richer flavour, consider adding a splash of beer or using a smoked cheese.

Cooking Instructions

  1. In a medium saucepan over medium heat, combine the shredded cheese, cream cheese & milk. Stir frequently until the cheeses are melted & the mixture is smooth.
  2. Once the cheese is melted, stir in Fancy Hank’s Taco Rub, cayenne & watermelon hot sauce, chopped pickled jalapeños & smoked paprika. Mix well.
  3. Taste the queso & add salt, pepper, more hot sauce or smoked paprika as needed to adjust the heat & flavour to your liking.
  4. Remove from heat & transfer to a serving bowl. Top with additional chopped pickled jalapeños & fresh coriander for garnish.
  5. Serve hot with La Tortillería Totopos for dipping.
